Here is a Sweet deal on the Oregonian "weekend edition" that Amy from at Money 4 This not 4 that emailed me.  She also clued me into ordering one for my husband as well so I will get 2 Friday, Saturday and Sunday papers delivered for only $2.00 a week!  I will be spending the same amount on 6 papers as I would on 1!  This deal is too way good to pass up.

Here's the scoop:

Your first 24 weeks are $1.00 a week
The next 16 weeks are $1.87 a week

After the 40 weeks the price goes back up to the regular "weekend edition" prices and so I will probably cancel at that point.

Mexican Rice Recipe!

This is a yummy and easy Mexican Rice recipe that I make everytime I make a Mexican meal for dinner.  The key to good Mexican rice is to brown it in a little bit of oil and not overmix it when you ad the tomato sauce.  I made this for a mexican potluck the other day and it was a complete hit.  The bowl was scraped clean!  I had a neighbor a few years ago that was from Mexico and sometimes she would add a bag of mixed veggies to the rice to make it healthier for her kids.

Mexican Rice
This makes a huge batch!

3 cups long grain rice (I have found that Calrose rice works the best)
1 1/2 Tbsp. olive or canola oil
16 oz. Tomato sauce
4 cups chicken broth
1 cup water
1 Tbsp. garlic salt
1 tsp. cumin
1 small onion diced fine

Brown rice over medium heat in oil stirring frequently.  Add onion and tomato sauce-stir lightly-then add broth, water + seasonings. Stir lightly. Bring to a boil and then turn down heat to simmer. Cover and cook for approx. 20 minutes.

Yummy Teriyaki Sauce Recipe!

My sister made this recipe 3 years ago and it has become a staple at my house!  Whenever I get that, "I need Teriyaki Chicken and Rice" feeling I whip up a batch.  It is super easy and is cheaper than eating out; I made dinner for our family of 5 last night for around $7!  This sauce is yummy on grilled chicken or beef and is a great marinade before grilling.  I usually triple this recipe for my family of 5.

Thanks Corbis Photos

Teriyaki Sauce

1/4 cup soy sauce
3 Tbsp. Honey
3 Tbsp. Minced garlic or to taste (I usually use 1 clove)
3 Tbsp. brown sugar
1/2 tsp. ginger (fresh or ground)
1/4 cup oil (I usually use olive but canola works well also)

Mix all ingredients together with a whisk and enjoy!
